THE GLUTEN-FREE GANG
 
 

WARM QUINOA PUDDING

Serves 6 as a dessert

Ingredients:

2

C plain quinoa, dry and uncooked
4 C water
1 1/2 C unsweetened (no sugar added) apple juice
1 1/2 C raisins
4 tbsp lemon juice
2 tsp cinnamon
2 tsp vanilla extract

Instructions

  1. Rinse and drain quinoa several times.

  2. Place quinoa in a large pan with water.

  3. Bring to a boil over high heat.

  4. Reduce heat, cover with lid, and allow to simmer until water is absorbed and quinoa is tender, stirring occasionally to prevent sticking. This is usually about 15 minutes.

  5. Mix in apple juice, raisins, lemon juice, and cinnamon. Stir together.

  6. Cover pan and allow to simmer for 15 minutes longer. Stir occasionally to prevent sticking to pan.

  7. Stir in vanilla extract and serve warm.
