POLENTA LASAGNA

Ingredients:
1 tube
Polenta
Cooking Spray
15 oz.
Ricotta Cheese
½ tsp.
Crushed Red Pepper
10 oz.
Frozen Chopped Spinach
2
Egg s– whites only
1 jar
Marinara Sauce
1 cup
Parmesan Cheese – fresh pre-shredded.
Directions:
1. Preheat oven to 400°.
2. Spray 11 x 7” baking sheet with cooking spray.
3. Cut Polenta in ½” width and arrange on pan to from bottom layer.
4. Mix together ricotta cheese, red pepper, spinach and egg. Spread over Polenta.
5. Spoon marinara sauce on top evenly.
6. Cover with foil and bake for 30 minutes.
7. Uncover and sprinkle with cheese and bake for additional 5 minutes or until cheese melts.
