Ingredients

  • 4fresh apples diced
  • 2 cups sugar
  • 1 cup vegetable oil
  • 2 teaspoons vanilla
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 2 1/4 cups gluten-free flour
  • 2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup nuts

Directions

  • Place diced apples in a bowl
  • Add sugar, oil, vanilla, soda, salt, and eggs.
  • Mix thoroughly
  • Sift dry ingredients together, add to the wet mixture
  • Pour into greased 9×13 baking dish or pan
  • Bake at 350° for 60 minutes (cake will shrink from sides of the pan)

Butter cream frosting

  • 2 cups powdered sugar
  • 1/4 cup butter
  • 4 ounces cream cheese
  • 1 teaspoon vanilla

Beat well and frost when cake is cool.
