Dry Ingredients

  • 1 3/4 cup white rice flour
  • 3/4 cup cocoa
  • 1 teaspoon baking powder
  • 1 teaspoon xanthun gum
  • 2 cups sugar
  • 2 teaspoons baking soda
  • 1 teaspoon salt

Wet Ingredients

  • 1 cup black brewed and cooled coffee
  • 1/2 cup oil
  • 1 cup sour milk (add 1 teaspoon vinegar – sit 5 minutes)
  • 2 eggs or egg replacement
  • 1 teaspoon vanilla

 Directions

  • Mix together wet ingredients and gradually add dry ingredients.
  • After mixing well, place in greased and floured 13 x 9 pan
  • Bake at 350° for 45 minutes
