Lemon-lime bars

Ingredients:

  • 1/4 cup powdered sugar
  • 1/2 cup butter (1 stick)
  • 1 cup gluten-free flour

Directions:

  • Cream ingredients together and press into 8×8 pan
  • Bake at 350° for 15 minutes

While baking above, blend together:

  • 2 eggs
  • 1 cup sugar
  • 1/4 tsp. salt
  • 3 Tablespoons lemon juice
  • 3 drops lime oil
  • 2 Tablespoons gluten-free flour
  • 1/2 teaspoon baking powder

Directions:

  • Pour mixture over the cooked pastry
  • Reduce oven to 325°.
  • Bake for 30 minutes
  • Allow to cool and sprinkle with powdered sugar
