- 1 cup quinoa
- 1 can small artichoke hearts
- Black olives
- Campari tomatoes
- Garlic Expressions (made in Perrysburg, OH)
- Cook quinoa and then add artichoke hearts (cut in half), desired amount of black olives (I usually cut in half) & campari tomatoes (desired amount and cut). Then toss it with garlic expressions. This is really a recipe where you can add as little or as much as you like of the above ingredients which is why I do not have exact measurements. It is great as a side dish or as a meal.
