Ingredients:

  • 1 cup gluten-free pancake mix
  • 1 teaspoon baking powder
  • 1 teaspoon xanthan gum
  • A  Dash of Salt & Pepper
  • 2 Garlic Cloves- Minced or Chopped
  • 3 Tablespoon cold butter cut into small cubes
  • 1 Tablespoon Parsley
  • 1 cup shredded cheese
  • 1/2 cup milk or buttermilk
  • 1 teaspoon olive oil
  • Topping
  • 3 Tablespoon butter
  • 1 garlic clove minced or chopped
  • 1 Tablespoon parsley
  • sea salt, optional

Directions:

  • Preheat oven to 400°
  • In a large bowl, sift and mix the pancake mix, baking powder , xanthan gum, and salt & pepper together.
  • Add garlic, butter, parsley & cheese and cut everything together using a pastry blender. Combine until it is in small pea size pieces.
  • Add milk & olive oil and use the pastry blender again to continue to mix all of the ingredients until the dough is thoroughly combined.
  • With a small scoop, place the round biscuits on the parchment paper lined baking sheet
  • Bake at 400° for 12-14 minutes
  • Topping:
  • While the biscuits are baking, mix the melted butter, garlic, parley & sea salt together
  • When the biscuits are done baking, spoon butter over biscuits & enjoy
  • You won’t be able to eat just one!
