- 1-3/4 cup G.F. flour mix (2 cups Rice flour, 2/3 cup potato starch 1/3 cup tapioca flour)
- 1-3/4 tsp. xanthan gum
- 1 tsp. baking soda
- 1 cup sugar
- 2 eggs
- ½ cup oil
- 1 (9-10 oz) pkg. frozen strawberries sweetened and undrained “thawed”
- In small bowl stir together flour, xanthan gum, soda and sugar.
- In a larger bowl, beat eggs and oil. Add strawberries with juice and beat lightly at low speed until berries are slightly broken. Add flour mixture and beat at low until batter is smooth.
- Bake 350° 18-20 minutes.
- Makes 16-18 muffins.
